On the Road Again........

There was nothing to stop us from leaving for our Christmas/New Year holiday.  The bathroom renovation is taking care of itself at "Paringa", the storage shed roller door is now installed, the reversing cameras have been fitted to the caravan and the "Saltwater" renovation is completed.  So, off we set.

We have no particular place to be apart from Christmas at Toowoomba with mum and New Year at "Evergreen" with son.  We have a few friends scattered around Queensland that we want to catch up with but they are all pretty flexible with times.  We are on a wait-list to have the van serviced at the place where we bought it at Bennetts Green (Newcastle), so we will probably head down to New South Wales to be close in case they have an opening.  We never thought that the service department would be booked out until February, but knowing the number of people purchasing caravans, it doesn't surprise us at all.

We were on the road by 9am on Monday.  It is always a bit of a shuffle to get the caravan out of our storage shed as the garden maintenance business beside us has lots of vehicles parked in just about all the available parking bays and we need a lot of room to exit!

Our first stop on our journey south was at the Babinda Bakery where we picked up a loaf of bread straight from their oven and of course the absolutely compulsory cream buns.  We stopped for lunch at a roadside rest stop and throughly enjoyed our salad sandwich, nectarine (that was not nice) and of course the cream bun.  We hardly felt like moving but we really wanted to get to Rollingstone the first night so we pushed on.

Rollingstone has an excellent van park right on the beachfront and we have stayed here numerous times.  The new management team where very helpful and they suggested that for $25 for two years, we join the Discovery/Top Caravan Park Group.  So far so good as we have already saved our membership!

We quickly set up the van and didn't even need to un-hitch as there were very few people in the park.  A walk along the beach is a must do at Rollingstone so we set off.  Even high tide didn't stop us as we strolled along the beach looking at the interesting shells and coral.  We very rarely see shells or coral at either Palm Cove or Port Douglas beaches and I don't really know why.  It would have something to do with the tide flow I imagine. Back at our camp it was showers, a couple of games of Backgammon, and straight to bed where we watched TV for a short while before a deep sleep overtook us.

Next morning we decided that we would only drive as far as our lunch stop each day.  This would give us around five-six hours of drive time or 300-400 km, and really that is as much as we need to do in a day. That way we can enjoy a late lunch and then a short nanny nap before we go exploring.  Today our journey took us through some very parched country with lots of fires around the Bowen area.  I hope the wet season comes early to water this dry country. It desperately needs it.

Our stop today was Airlie Beach and we have decided to stay here two nights.  The first time we visited the Whitsundays was on our honeymoon in 1978.  My parents had very generously given Philip and I a week on Hayman Island as a wedding present. The next time we visited was with my youngest sister and her husband some thirty odd years ago.  Back then it was still a relatively sleepy little area with magnificent beaches and Islands.  Of course the magnificent island and beaches have not changed but the area has been developed beyond belief!  Of course we have said this of lots of places and it is a sign of our age that we rememberer what they used to be like.  Having said that though, we are in love all over again with Airlie Beach.  At this time of the year there is hardly anyone around and we pretty much have the run of the Island Gateway van park.  I dare say when school holidays start it will be a different matter.

Today we drove to Cannonvale to purchase a couple of things for the van and then we headed to the stinger net on the man-made beach at Port of Airlie.  It is one of the largest stinger nets we have ever swum in and Philip enjoyed lapping up and down. As for me, well, I'm just a whale....

We are tossing whether to stay another night but our friends in Tannum Sands are waiting for us so we will head off again tomorrow.  Have no fear though because Airlie Beach is high on our list of places to return to so we will be back as soon as possible.

Someone asked me how we spend our time when we are in Port Douglas.  It is really a break from the mundane when we are here.  I don't cook many meals and if I do I make it as simple as possible.  I'm really crushing on the Marions Kitchen Range.  These were on special at Coles last week for $6 and they are good value.  All you have to add is your protein.

Our mornings in Port this time around have been pretty full on with renovations to the apartment, new roller door for the storage shed and extras fitted to the caravan.  We have also had to deliver our slide-on to Cairns from where it will be freighted to Melbourne.  The new owners will love it as much as we did.  It was kinda sad to say goodbye as we have had some amazing trips with our little "Tardis".

But, getting back to our day, each morning if we don't have anything on the agenda we  start with some form of exercise.  We both like to rise early and lately that has been around 5.30am.  We have coffee in bed and then Philip goes for a cycle with his buddies and I usually do a 5km walk.  We then have breakfast either in the apartment or at one of the local restaurants.  We had a very good breakfast at Monkey Joes this week and an awful one at Ziva.  The one at Monkey Joes was love on a plate whereas the Ziva breakfast was literally thrown onto the plate with no love at all.

It is such a shame that some Chef's don't take pride in their presentation.  I follow Spencer Patrick on Instagram.  He is the owner and hatted Chef of Harrisons Restaurant.  He wrote that before every service he is nervous because without nerves comes arrogance and with arrogance comes mistakes.  This is very true of some chefs but you can not say that about C'est Bon Restaurant in Cairns where we again dined this week.  Their food presentation is the best I've seen.  I had Potato, Leek and Pear soup followed by Chicken Cordon Bleu. They say you eat with your eyes so check these dishes out and tell me your mouth is not salivating.....

On Saturday we drove again to Cape Tribulation for lunch with our friends who are were staying at the Cape Tribulation Camping Ground.  Gosh it is a lovely spot and one I'm certain we will return to.  When we arrived at the camp there was a note on the door that said "At the Beach". We thought that they must have gone for a walk so we settled back with a beer and waited for them to return.  We finished the beer and were about to open another when Philip decided he had better go for a bit of a walk down to the beach to see if he could spot them. He was back within five minutes with a command to follow him back down to the beach.  What a lovely surprise to find that our friends had set up a table complete with linen tablecloth, in the shade of some beautiful trees right on the beach.  The women enjoyed a glass of bubbles and the boys settled back with chilled beers while we sat back to shoot the breeze.  We feasted on home made pappardelle with a fabulous bolognese style sauce followed by Lemon Curd Cronuts.  Yum, Yum. After lunch was cleared away our friends taught us how to play a card game called Frustration.......well named!!  Around 4pm we said our goodbyes and made the return trip back to Port.  It really was one of the nicest days.

On Sunday we had a long awaited lunch date with my hairdresser (Jodie) and her partner.  Jode has been my hairdresser for 14 years!  We have such a great rapport and I love my hair appointments.  We have only caught up socially a handful of times over the past few years but each time it ends up with us all drinking rum and cokes at one of the local venues!  We started our lunch date at Seabean Restaurant where they serve delicious Tapas and Paella.  Gosh we made pigs of ourselves. Jode and I washed down our food with the Cocktail of the Day while the men stayed on beer until we moved to a different venue.  It was a long lunch date that went well into the evening with many laughs.

Most afternoons, when the heat has left the sun, Philip and I walk down to the beach for a leisurely swim in the stinger net enclosure.  We rock around in the waves for ages and we absolutely love it.  We ask ourselves every time "Why haven't we been doing this at Palm Cove?".  We put it down to just being too busy but our new year resolution will be to make time for a swim each afternoon.  It can't be that hard.....

A change of venue

We have moved from Palm Cove to Port Douglas.  No.  Not a permanent move, just while we are having renovations at "Paringa".  The body corp is waterproofing and re-tiling all the balconies at "Paringa" so we thought it would be a good idea to go ahead with our bathroom renovation while this was happening. So, we have packed away at least half of the apartment to make way for the tradies who are going to be going in and out of the apartment.  We have employed a project manager for the bathroom renovation who will oversee everything, thank goodness.  We do not have to lift a finger or make any decisions.  This also means that we can leave for Christmas holidays sooner rather than later.

So, what's been happening.  Well we moved into our Saltwater Apartment on Sunday 1st November and it has been go go gooooo!!! We are juggling so many balls at the moment and it became all too real when the manager informed us that the cabinet re-surfacing that we had approved some time ago was going to happen......WHILE WE ARE STAYING IN OUR APARTMENT!!!

Fortunately it was only going to take two days so we decided to find things to do.  First day we drove up to Whynabeel and then on to Cape Tribulation.  We haven't been to Whynabeel for more than ten years and it was terribly sad to see Kaynak Theatre closed, the Glass Blowing Factory closed and the Tropical Fruit Farm closed.  The only business still running is the High Falls Teahouse.

After Whynabeel we boarded the ferry to cross the mighty Daintree River and are very pleased that the Council seems to be heading down the path of two ferries rather than a bridge to ease the delays at the river crossing.  It is the right choice.

We always enjoy the drive to Cape Tribulation and this time was no different.  I am always on the lookout for the elusive Cassowary but have not had the good fortune yet to see one up close and personal. We were back in Port for a late lunch at the Surf Club. I highly recommend the Crunchy Prawn Sushi Roll!

Oh, I forgot Melbourne Cup!  What a great day that was.  No winnings for us but the company and food we enjoyed at Zinc Restaurant more than made up for it.  We joined eleven friends to celebrate a 52nd birthday on the day.  A lovely birthday present for our friend was winning the "Fashion of the Field" and  well deserved too. After Zinc we all retreated to Mamman Bar and Bistro for the after party.  This venue is fast becoming a must do when visiting Port Douglas.  It has a very relaxed atmosphere and we have enjoyed a couple of  Happy Hours since we have been staying in Port. It is recommended to book a table as it fills very rapidly.

We have had to make a couple of trips backwards and forwards to Cairns over the past couple of weeks and each time we have made sure that we have booked a table at the French Restaurant, C'est Bon.  Wow.  The food here is so incredibly good.  For $50 you get to enjoy three courses with either beer or wine and the lunch menu changes weekly.  How good is that!

Speaking of very good food, we took our friends Kate and Mike, for belated birthday presents, to the oldest restaurant in Port Douglas.....Nautilus, for a five course degustation. We feasted on Sugarcane Cured Barramundi, Seared Scallop, Grilled Moreton Bay Bug Tail, Sansho Duck Breast and Plum Tartlet. The thing I enjoy most about Nautilus is the atmosphere and charm of sitting outside under the giant rainforest trees amongst the lush tropical plants in high backed chairs that in any other setting would seem ridiculous, but here they are perfect.

In between everything that has been going on we have been patiently waiting for the second roller door to be installed at our storage shed.  So far the delivery date has been put back three times and each time the company is blaming it on the freight lines.  Jury is still out on that excuse.  We are also waiting for the reversing camera to arrive so that we can have that installed on the caravan.  When these two things happen we can start heading south for Christmas holidays. Yippeee!!

I have so much more to tell you but I have decided to spread it out over a couple of posts so stay tuned.

Kayaking, Kayaking and yet more Kayaking.......

It's been a glorious week here at Palm Cove.  The wind has died down to a gently breeze and it is the perfect time to be out on the water.  We aren't the only ones to think that as we have watched jet skis, paddle-boarders, kayakers, canoeists and water skiers all enjoying the magnificent weather.  The only ones to put away their gear are the wind surfers!

Philip inflated our canoe some time ago and we have been waiting patiently for the wind to drop so that we can hit the water.  For our first trip in the kayak this week we did a slow paddle up and down the Palm Cove coastline as we didn't want to push ourselves too hard.  We knew that we wanted to do this on a fairly regular basis and you don't want to have burn-out on the first trip.

Honestly, to paddle along the coastline you would not know that there is a whole village beyond the trees. It is excellent town planning by the council to have kept so many beautiful trees along the foreshore.  As I go for my morning walk I am simply in awe of the centuries old Paperbarks that grace the area.  They truly are magnificent and need to be protected.  Having said that though, some of the trees are near their end and it is not uncommon for the trees to shed one of the larger limbs that could easily kill you if you were unfortunate enough to be under it.

Palm Cove playing "hidey" amongst the palm trees

But, getting back to the kayak, today we decided to circumnavigate Double Island.  The island was once home to an exclusive resort for the rich and famous but it was sold to a Chinese company some years ago and has sadly (apparently) fallen to "rack and shambles".  We were on the water by 6am and it was a perfect paddle to the island that is roughly 1.5km from Palm Cove.  There were lots of other kayakers who had the same idea as us and indeed there are lots of tour groups that visit the island on a daily basis.

We paddled slowly around the island passing Stand-up Paddle-Boarders who we silently congratulated on the effort they put it!  We then passed fisherman fishing from their canoes and I'm sure they would have caught plenty because as we rounded the island, the water became incredibly clear and shallow and we could see lots of schools of fish swimming in and out of the giant seaweed and coral.

We stopped paddling on the southern side of the island and just floated with the tide to observe what lay under us. It is truly spectacular and literally took my breath away.  I am not a water sign being a Virgo, but I just love being in and near the water.  I find it both calming and soothing.

We were home again by 8.30 and tucked into a big feed of bacon and eggs.....perfect. Now we are just contemplating taking our beach lounges down to the waters edge to do a little reading, swimming and sun-baking.  Life is good.

Body Tune Ups......

That seems to have been the order for the last couple of weeks.  We have had many appointments Audiologist (Me), Optometrist & Orthopaedic Surgeon (Philip), Skin Checks (both of us). It's not good news regarding Philips knee, but not unexpected.  Early next year he will have a knee replacement.  The knee has not been kind to him in the past week so waiting for the operation over the next few months are going to be difficult.

We still plan on driving south in December. It just means that I will now be doing a lot of the driving.  I am fairly confident towing the van as we shared towing the gooseneck horse trailer backwards and forwards to Julia Creek for many years and it is the same size as the caravan.

In between all the appointments we have been working with our interior designer on the renovation of the bathrooms.  We met with them yesterday and we have chosen most of the fit out but as we all realise, we are going to have a Plan A, B and possibly C because this is an old building and we just don't know what we are going to find once we start pulling everything apart.

Apart from all this busyness we have enjoyed a fair amount of eating out both with friends and without.  We tried the new Rattle'n'Hum with our friends and although the food is glorified "pub grub" it was still very delicious.  Most of the crowd chose the slider variety board and I chose the Calzone. Instead of ordering dessert we came back to our apartment where I force fed everyone some Chocolate Ginger Cake that I had made earlier in the week.  It wasn't my favourite cake but it was okay I guess.  We all sat around the table until the sun went down and, as always with these friends, it was fun and enjoyable.

This week we also ate out at the one and only Pier restaurant that was opened for lunch.  It is just devastating to see so many shops/restaurants closed in the complex.  Some I'm guessing will never re-open.  We have vowed to support as many of the local businesses as possible by shopping locally but it is difficult when so many are shut. Please Premier......open the goddamn borders and let us take our chances.

Another restaurant we tried this week was O'Donnells Irish Bar.  A friend at our Seniors Gym class had recommended it and we were somewhat underwhelmed.  Philips Seafood Chowder was delicious but my Grilled Barra Sliders had bones in the tiny little fillets.  I think our problem, if you can call it that, is that we like to eat out for lunch rather than dinner and the dinner menus are far superior to the lunch menus.

Home cooking is, and always will be, my great passion and I am so fortunate that I have a husband who will try anything.  An interesting meal I cooked this week was Honey and Lemongrass Chicken with Pear. Wow!  It was such an exciting flavour combination and a recipe that will have a repeat performance in my kitchen.

I watch a lot of cooking shows and am inspired to cook the meals that the chef presents.  I made Justine Schofields Sweet and Sour Pork Ribs that were tasty but I do prefer another recipe that I have in my repertoire that is a much lighter version of Justines Sweet and Sour.

I also made a very American Philly cheesesteak bowl rather than the typical sandwich.  This recipe came from my Hemochromotosis cookbook and it was a very interesting dish because you marinated the steak in coffee.  Coffee fends off the iron in the beef, so it is a good combination for my diet.

My exercise regime is still on track although I definitely allow for downtime.  I am doing two yoga classes each week and nothing will stop me from going to those classes as I enjoy them so very much.  I go to Seniors Gym classes twice a week.  I don't love Gym but I know that I have to do weight bearing to build my bone density so it is a necessity.  I'm actually enjoying it a little more than when I first started classes, so perhaps in six months time I won't want to miss them (said with tongue in cheek). One class is a real "huffy puffy" aerobics workout and the other class is a lot more fun where we always end the class with Nutbush City Limits and the Macarena.  They are such fun dances and are actually a really good work-out!  I still manage to get a few walks in each week when we have nothing on.  My favourite walk is to Kewarra Beach.  It takes me around 80 minutes and it is for the most part a shaded walk.  My other walk is around Argentea housing estate.  I like to check out all the amazing gardens.  Up until this past week Philip and I have been doing beach walks but I think I will be doing them by myself until Philip has his knee replacement.

Well that's about it folks.  My next post will probably be from our apartment in Port Douglas where we will be for the month of November while our renovation takes place.  The Body Corp is also replacing all balcony tiles in all of the twelve apartments in November/December so there is going to be a lot of noise and dust for the next couple of months. It will be a good place to stay away from!

Another week in Paradise

We really are so blessed to live in this lovely tropical part of the world and even more so when I think about a lot of the folks around the world who are going into a second Covid lockdown.  This insidious pandemic is never ending.  I wonder if we should somehow just try and live with the damn thing and take our chances.  I know the elderly would suffer but talking to my mum about it, well I don't think they are too worried.  And lest not forget that us baby boomers are now also the older generation and even though I have a somewhat compromised immune system I am ready to tackle Covid head-on. Bring it on and let's open up our country again.  Ok, I will now get off my soapbox.......

So what's been happening this past week or so.  We decided, finally, to put the Camper up for sale.  What a drama that's been.  What is it with people that can't make a decision!  We had a huge response to the sale and a couple from Cairns asked for an immediate inspection, that we agreed to.  They said yes they will take it and that they had paid the $$'s into our account.  We were very happy but that was short-lived when we received a message the next day that they had decided against.  Back to the drawing board and more advertising.  So now we have a couple from Victoria (!!) who have paid a hefty deposit and getting a friend to inspect the camper on Wednesday.  I don't have a good feeling about this potential sale though.  The logistics of getting the camper down to Victoria I think will defeat them.

We also sold Philips old Trek Bike on gumtree this week and that was another drama with people "to and frooing".  But it did sell relatively fast so we can't complain.

So what else has been happening this week.

We enjoyed our first Connoisseur's Lunch this week at the Reef House Resort. The group get together once a month to enjoy a lunch at various venues around Palm Cove.  They have a guest speaker and this week we were lucky enough to enjoy a talk from Paul Furse who's grandfather is thought to be the original James Bond 007 and yes there really was an M.  Paul inherited all his grandfathers diaries and he spoke for most part straight from those diaries.  The lunch we ate was really lovely with lots of choices.  I chose the Crispy Skin Salmon with asparagus puree followed by Lime Brûlée.  We were given a glass of champagne on arrival and we sipped on a delicious Sauvignon Blanc during the talk.  It was a lovely lunch and we met some really nice people who I'm sure we will meet up with again.  We now know a lot more about the area we are living in and the "things" going on and that was the whole idea of going to the lunch.

My two friends and I went to a Terrarium making course on Saturday.  It was lots of fun and it was interesting to see how different our terrariums where, even though we used identical plants and embellishments.  Mine is sitting in the bathroom under the skylight at the moment.  One of my plants is already looking a little sad so I may have to find another spot.

On the cooking front I was surprised to find a Burrata in the cheese section of my local Coles store this week.  Wow, I had always wanted to try one and believe me I was not disappointed.  The recipe I chose was a simple pasta dish that took a whole 10 minutes to put together and I placed the Burrata ball in the middle of the bowl and then broke it apart and mixed through the pasta.  My husband voted it a definite keeper and I have to say it really was one of best pasta dishes I have made!

Yesterday we woke early to watch the start of the Ironman 70.3.  The swim leg is right along the waterfront here at Palm Cove so we had a birds eye view.  They close the whole esplanade so it was lovely to see people instead of cars on Williams Esplanade!

Our friends came and joined us for breakfast afterwards and they are always enjoyable company.  Kate sent me some photos yesterday dating back to 1978 just after we were married.  Gee I wish I knew then what I know now......or maybe not....

Take care folks

Time flies........

To say that we have been busy is quite the understatement.  Philip and I both commented that we have to somehow stop jamming so much into a week.  For goodness sake we are retired and should be slowing down not speeding up.  I wonder if deep down we are worried that we are going to become bored.  Heaven help us........I wish!

It's been well over a month since I last posted and so much has happened in that time.  Philip flew down to Marco for ten days to help him erect a new fence. When he flew home he brought Mum with him who stayed for two weeks and didn't that fly.  I decided to deliver mum back to Brisbane so I flew down and back in the same day.  It wasn't difficult as I managed to get back to back flights so I only had two hours to kill in Brisbane.

After mum left it was a quick pack up of the van for a trip to Mission Beach with two other couples who are very special friends.  It seemed that we just got into relaxation mode and we had to once again pack up and return home.  Note to self.....book for at least a week next time.  Mission Beach is such a beautiful place and it was very fitting that we were able to celebrate what should have been Kurt's 41st birthday at Buko Restaurant at Castaway Resort. I highly recommend this restaurant.  We chose tapas that just keep flowing and were both delicious and filling.  Of course they were washed down with cocktails for the women and beers for the men.

In this past week our new lounge arrived and I LOVE it.  We purchased it from UD Furniture in Brisbane. The furniture is handmade to perfection and it is well worth paying the extra dollars to get quality.  They usually have a turnaround of four weeks but as the material from Warwick Fabrics had to come from Melbourne there was a slight delay.  Still, all in all it is much faster than our bedside tables and dresser that were ordered from Harvey Norman in July and are still on a slow boat from China.  We honestly thought we were purchasing Australian Made.  Another note to self.......check origin thoroughly.

We had to hire a crane to take the old lounge away and bring the new one in.  It caused quite a bit of commottion in the street.  Folks just love watching a crane operate and I must admit I couldn't stop taking photos.  The crane operator and his offsider were magicians at manoeuvring that furniture from three floors up!

So that brings us to this week that has been lots of fun with three girlfriends (all ex Julia Creek) rocking up for sundowners and pizza on Saturday night. We had so much fun and laughter as the drinks flowed.  We were quite a noisy lot and I did try to take the party inside but they were having none of that!  We had the obligatory photo shoot before they left at midnight.

Sunday we both hit the road, Philip on his bike and I did the 6km walk to the end of Clifton Beach.  It was probably not the best thing to choose after a big night but it felt good.  After all that exercise we decided to walk down to the Underground Restaurant for lunch and it is another restaurant I can recommend.  I had the pork belly and sides that absolutely melted in the mouth.  Philip chose the garlic prawn pizza that was also "to die for" delicious.

So that brings me to today that is relatively quiet.  We had to move a painting over the lounge and rearrange the lounge slightly but that is about it.  We are still making lunch our main meal and suits us very well.  I like to "go go go" in the morning and relax in the afternoon so lunch fits in well with that plan.  I slow cooked a ragu two days ago that has been sitting in the fridge and developing flavours.  We will have that with gnocchi today and the leftover will go into the freezer for meat pies next week.

My way of relaxing lately has been huddled over the jigsaw table.  I bought an easel style table that certainly makes doing a puzzle a lot more user friendly.  Mum bought two puzzles with her so I have completed them and am now working on a rather complicated puzzle.  It is a photo of Portofino and I love it so much.  I dream about the day that we might be able to once again return to Italy!

Take care everyone,

x Judi,
